After years of concocting much-loved cocktails in the Silom neighborhood, Vesper has finally stepped into a new era under the direction of the talented Tom Hearn.
The bar, which was recently honored as the recipient of the Legend of the List award at the Asia’s 50 Best Bars 2025 ceremony, now goes harder than ever with its latest menu: Britain Through Seasons. The British barman conceived this menu by blending his passion for English-style concoctions and the country's four distinct seasons, intertwining them with the life stories of Vesper's founders, Chote and Debby.
Britain Through Seasons comprises a total of 12 cocktails that encapsulate the essence of each season. We were lucky enough to try a few from each category:
Starting with Spring, we have Rhubarb & Cream, a unique, vibrant take on the classic Ramos Gin Fizz that showcases the tang-tastic taste of rhubarb. Just one sip and you’ll feel the crisp freshness of the blooming season. There’s also Beesting, an inventive, beeswax-infused Sazerac that will be a favourite for the sweet-toothed.
For Summer, Tom twisted the popular Pornstar Martini into his own number called Solero, which packs a sweet and sour blast of mango and passionfruit. The mini ice cream served on the side is a lovely touch to this refreshing cocktail. Our favourite from this season is Parakeet—it seems like a simple tequila soda, but the surprise use of avocado and shiso really blew us away.
Autumn is up next, and Leaf & Soil manages to comfort us, making us feel warm and cozy in the season. This drink gives off a distinct, smoked aroma of pumpkin seeds and fig leaf. Fans of the Manhattan will also love the earthy Roots, which features beetroot as its main ingredient.
Lastly, the Winter section features Baked Apple, a tipple inspired by the traditional English pudding for the season, and Forest Walk, a sophisticated twist on the classic Gimlet, infused with the resinous aromas of Douglas fir.
