While Chef Alex Dilling delivered acclaimed cuisine at Le Normandie, he gracefully stepped aside when a culinary giant like Chef Anne-Sophie Pic arrived. This wasn't due to a lack of skill—far from it—but because Dilling was given an equally formidable new mission at Lord Jim’s, also within the Mandarin Oriental, Bangkok.

Lord Jim’s is widely beloved for its immensely popular buffet, but Dilling's task is to attract a new clientele by completely elevating and reinventing the à la carte menu. He is achieving this through a sophisticated blend of Provençal Southern French cuisine infused with vibrant Mediterranean influences. This highly anticipated culinary shift is set to transform the dining experience and redefine the iconic riverfront institution.
